This is my most popular recipe of all time across pretty much every platform. When I say it truly launched the dense bean salad trend and changed my life I mean it. This recipe is bright and flavorful without being overly spicy or intense. It’s packed with fiber and protein and the mozzarella soaks up all the seasoning. I love to use the sundried tomato oil as part of the dressing so it doesn’t go to waste.
